Classic Parmesan-Garlic Baked Oysters

Yield: 24 oysters

  • 1 stick butter
  • 3 cloves garlic, peeled and minced
  • 1 1/2 cups Parmesan cheese, grated
  • 3/4 cup breadcrumbs
  • 3 tablespoons minced parsley
  • 24 oysters in shell
  1. Preheat oven to 450 degrees.
  2. Melt butter. Stir in garlic and set aside to cool and thicken slightly.
  3. Mix Parmesan, breadcrumbs, and parsley; set aside.
  4. Shuck oysters, draining the liquor (save it to flavor some rice or couscous). Cover the bottom of a sheet pan or cast-iron skillet with rock salt.
  5. Top each oyster with about 1 teaspoon butter-garlic mixture, and enough cheese-breadcrumb mixture to cover the open shell. Place oysters on rock salt. Bake 10 minutes. Use tongs to remove oysters.

Musaka

Ingredients

  • 1 pound of ground meat (50% port / 50% beef)
  • 2 pounds of potatoes
  • 2 onions
  • 1 jar of diced tomatoes
  • 1 bucket of yogurt
  • 2 eggs
  • 1/4 pound of mozzarella
  • 5 table spoons of flour
  •  1/2 cup of cooking oil
  • 1 table spoon paprika
  • 1/2 tea spoon black pepper
  • 1 tea spoon savory
  • 1 table spoon salt

Preparation

  • Put the cooking oil in a deep pot and heat. Peel and dice the onion and add it to the pot. Stir regularly. Cook until the onion gets soft.
  • Mill half of the tomatoes in a food processor and add it to the pot. Add the ground meat and mix it well with the tomatoes and the onion.
  • Add the black pepper, the savory and salt.
  • Cook until the water from the tomatoes is gone or very little is left. Then add the paprika and stir well.
  • In the mean time you had to peal the potatoes and cut it into a small cubes (1/2 inch side). Add them to the pot and stir well.
  • In a baking rectangular pan pour some cooking oil to barely cover the bottom. Mill the other half of the tomato jar and spread evenly on the pan bottom.
  • Pour the mix from the pot to the baking pan and spread evenly. Add 1/2 cup of hot water.
  • Put the baking pan into a pre-heated oven at 400 degrees Fahrenheit. Bake until the water disappears.
  • It is time for the icing. In a big bowl mix one jar of plain yogurt, 2 eggs and shredded mozzarella.
  • Add 5 table spoons of white flower  while constantly stirring. Keep stirring it until you get a very homogeneous mix.
  • Take the pan out of the oven. Pour the icing on top and spread evenly.
  • Put the pan back into the oven.  Cook until the top becomes golden brownish.
  • Take the pan out of the oven and put it aside to cool off. Turn off the oven.
  • You can serve it with parsley on top and yogurt on the side.

Bulgarian Pancakes

How to make pancakes – the Bulgarian way

Ingredients

  • 3 eggs
  • 1 cup milk (1 cup = 240 ml)
  • 1 cup water
  • 3 x 1/2 cup white flour
  • 2 tablespoon sunflower oil or olive oil
  • 1 teaspoon salt

Preparation

Mix the eggs, the milk, the water, the oil and the salt in large enough pot.
Start adding the flour gradually stirring the mix at the same time until it becomes homogeneous.
When ready pour the mix into a jug with a handle – it will be easier to pour it on the pan later. Get an empty plate to put the ready pancakes into.
Put a non-sticking pan on the hot-plate (electric ring). Turn the dial to 5 (middle of a 10 position dial). Wait about 4 or 5 minutes for the pan to heat up.



Pour some of the mix onto the pan – put enough to cover the bottom but not too much because you do not want the pancake to become too think. Wait few minutes until the pancake starts to come off the pan. Then flip it and wait another few minutes. Watch this short video to see how to do it:

And these are the ready pancakes. You will get about 10 pancakes if you use the ingredients mentioned above.
Use some chocolate spread or strawberry jam or whatever you like – spread it on the pancake and then roll it. You can add some whipped cream if you want.

Bread recipe with Breadman TR875

This is a recipe for making bread with Breadman TR875.

Ingredients

  • Water – 275 ml, pre-heat it in a microwave for about 1 minute
  • Salt – 2 tsp (teaspoon)
  • Sugar – 1 tsp
  • Olive oil or sunflower oil – 2 tablespoons
  • Whole Wheat Flour – 1 cup
  • White Flour – 2 x 1 cup + 3 x 1/4 cup
  • Yeast – 1 teaspoon

Preparation

Make sure the bread pan and the kneading paddle are clean – wash it if necessary and then dry it. Pour the water into the pad, add the salt, sugar, oil and the flour. Do not mix it. Lastly add the yeast at the top. Put the baking pan back inside the bread machine and close the lid. Choose program 2 (FRENCH) by pressing the MENU button until it shows up on the display. Press the START button. The bread is ready in 3 and a half hours.
