Lentil soup

  • In a pressure cooker put 1.5 cups of lentil. Often the lentil has small rocks – make sure to remove these in advance.
  • Use a food processor to mill 1 onion and 3-4 carrots. Add them to the pressure cooker.
  • add 6 table spoons of cooking oil
  • add 12 cups of water
  • close and seal the lid and put on the stove to boil (knob to 6)
  • when the steam from the cooking pot starts to go out turn the stove knob to 4
  • let it cook for another 15 minutes
  • open the valve to release the steam from the pressure cooker
  • when there is no more steam coming out from the cooker open the lid
  • add 3 cups of tomatoes (milled in a food processor) and 3 table spoons of salt.
  • Place the lid back but do not seal it.
  • let it cook for 15 minutes
  • open the lid
  • add two chopped cloves of garlic
  • add 3 table spoons of savory
  • stir everything well, put the lid on, turn off the stove and leave the cooking pot on the stove.
  • let it cool off  to a temperature at which it can be consumed.
  • add a some parsley when serving

This is it – enjoy!

Variant 2

  • In a regular pot put 2 cups of lentil. Often the lentil has small rocks – make sure to remove these in advance and wash it.
  • Use a food processor to mill 1 onion and 3-4 carrots. Add them to the pot.
  • add 6 table spoons of cooking oil
  • add 9 cups of water
  • close the lid of the pot and put on the stove to boil (knob to 6)
  • when it reaches boiling point, turn the stove knob to 4
  • let it cook for another 20 to 30 minutes
  • add 2 cups of tomatoes (milled in a food processor) and 3 table spoons of salt.
  • Place the lid back.
  • let it cook for 5 minutes
  • open the lid
  • add two chopped cloves of garlic
  • add 3 table spoons of savory
  • stir everything well, put the lid on, turn off the stove and leave the cooking pot on the stove.
  • let it cool off  to a temperature at which it can be consumed.
  • add a some parsley when serving

This is it – enjoy!

Chicken with rice

  • Add 6 cups of water in a regular middle-size boiling pan
  • Add 10 to 12 pieces of chicken breast
  • Add 2 table spoons of salt.
  • Put the lid on and place it on the stove to boil (put the knob on 5 or 6).
  • You have to watch it from time to time because a pressure builds and the steam will want to escape. If this happens just crack open the lid to allow the steam to escape and keep it like this or alternatively turn down the heat a bit.
  • There is no set time to wait – it depends on the amount of the meat, the water temperature, etc. Instead you have to poke the meet with a fork from time to time to tell if it is ready. If the meat is soft and and the fork sinks in it without much resistance it is ready.
  • Use a food processor to mill 1 onion and 3 to 4 carrots. Add them to the pan and boil for another 10 minutes.
  • Put 3 cups of rice in a baking pan.
  • Add cooking oil to the rice and stir until all of the rice is mixed well with the cooking oil.
  • Add 5-6 table spoons (at least) of mint to the rice and stir thoroughly again. Make sure to rub the mint between your fingers to make it extra fine before adding it.
  • Carefully pour the water and the meat from the pan over the rice. The meat has to lay on top of the rice, so it can be baked properly later.
  • Put the pan in the oven. Set the temperature to 385 F and bake.
  • When the water is absorbed by the rice and the meat becomes golden/brownish your dish is ready.

Congratulations! You made yourself enough food for a week! Keep refrigerated and re-heat only as much as you can eat at a time.

Consume with a green salad or Shopska salad (like the Greek salad but better 😉 or Tarator.

 

 

 

 

Veal Soup

  • Add 8 cups of water to a pressure cooker
  • Add veal meat ( 2 steaks with bone)
  • Add cooking oil – 5 table spoons
  • Add salt – 2 table spoons
  • Put the lid on and seal it (twist the handle on the top to secure it in place).
  • Place the pressure cooker on the cooking stove and turn the knob to 6.
  • When a steam is starting to come out turn the know to 4 and keep boiling for 1.5 hours.
  • When the time is up open the valve and let the steam out.
  • Open the lid of the cooker pressure and take the meat out. Keep the water on the stove so it does not cool off.
  • Remove the bones and cut the meat into pieces with size of a nickel (5 cents) or a dime (10 cents)
  • Return the meat into the pressure cooker
  • Chop 2 bell peppers (1 green + 1 red) and add them to the cooker
  • Chop 1 onion and add it too
  • Peel and dice 3 potatoes into pieces the same size as the meat. Add them to the cooker.
  • Close the lid (but do not seal it this time) and boil for 30 minutes (knob at 6)
  • Open the lid and add 1 cup of grinded tomatoes (you can use a tomato paste instead).
  • Let it boil for another 10 minutes.
  • Turn off the stove and let it cool off  bit. You are done!

Serve with bread and a green salad on the side. Enjoy!

Пилешка супа с фиде

  • 2 парчета пилешките гърди (около 450 – 500 гр.) се измиват и се слагат в тенджера с вода (2-3 пръста под ръба) да кипнат.
  • Събира се пяната и се изхвърля.
  • Слага се сол на вкус, 3 супени лъжици олио, 1 глава кромид лук и 3 средно големи моркова се смилат и се добавят.
  • Слагат се в тенджерата. Месото се вари докато се свари.
  • Изважда се месото и се нарязва на хапки.
  • Връща се в тенджерата и се слага домати консерва – 1 чаша (cup).
  • Оставя се да ври 10 минути. Слага се начупено фиде – едно кръгче (начупено на малки парчета).
  • Ври още 10 минути.
  • Слага се застройка от 1 жълтък + 3 лъжици кисело мляко.
  • От супата се слага в застройката за да бъде топла.
  • Застройка се добавя бавно и се бърка за да не се пресече.
  • Оставя се да ври на много слаб огън за 5-10 минути.
  • Слага се нарязан магданоз и се изключва.

Cajun Chicken Pasta

  1. Пилето се нарязва на парчета и се омесва с 1 чаена лъжица cajun spice blend и се оставя да се ди 30 минути..
  2. Пилето се задушава в тиган на слаб огън с малко масло и вода.
  3. Нарязват се една червена и една зелена чушка, гъби и 3 стръкчета зелен лук.
  4. Слагат се да се варят спагети в дълбока тенджера със много вода и сол. Варят се около 12 минути.
  5. Когато пилето е готово се добавят нарязаните зеленчуци  се готви още 10-15 минути.
  6. Добавя се  сметана (heavy cream)
  7. Добавя се 2 скилидки смлян чесън
  8. Поръсва се черен пипер и лимонен пипер.
  9. През това време спагетите трябва да са станали готови. Изцежда се водата от спагетите и пилето и дригуте продукти се добавят.
  10. Разбърква се всичко хубаво и е готово за ядене.

Лазаня

  1. Слага се около 700 (1.5 паунда) грама кайма (смес) размита с вода да ври в тенджера с 1 буркан смлени домати.
  2. Добавя се готов сос Маринара в каймата когато е готова (сварена) и се оставя да ври още 10 минути.
  3. В тава се подреждат слоеве кайма и лазаня ( 24 листа) като се започва със слой кайма
    • слой кайма – 1 см дбелина
    • слагат се 4 листа от лазанята
    •  слой кайма – 1 см дбелина
    • слагат се 4 листа от лазанята
    • слой кайма – 1 см дбелина
    • слагат се 4 листа от лазанята
    • слага се смес от 2 яйца, сирене и 141 грама спанак
    • слагат се 4 листа от лазанята
    • слой кайма – 1 см дбелина
    • слагат се 4 листа от лазанята
    • слой кайма – 1 см дбелина
    • слагат се 4 листа от лазанята
    • слой кайма – 1 см дбелина
    • най-отгоре се слага 1 буркан сос Маринара
  4. Слага се тавата във фурна и се пече на 220˚C (430˚F). Когато кипне се слага алуминиево фолио върху тавата за да не пръска.
  5. Когато е почти готова се поръсва с настърган кашкавал, връща се обратно във фурната докато кашкавала се разтопи и се изключва.
  6. Оставя се да поседи във фурната докато кашкавала се запече.

Боб чорба

  1. Накисва се боба 1.5 чаши (350 мл) за през ноща.
  2. Прецежда се и се слага в тенджера с нова вода.
  3. Слага се на котлона да кипне.
  4. Изважда се боба и се маха водата. Слага се в тенджера под налягане.
  5. Смила се една глава кромид лук и 2-3 моркова и се добавят към боба. Добавя се олио.
  6. Добавят се 10 чаши вода (10 x 235 мл = 2.350 литра).
  7. Не се слага сол !!!
  8. Затваря се тенджерата и се слага на котлона на 6.
  9. Когато кипне и почне да излиза пара се слага на 4 за 1 час.
  10. Когато мине 1 час котлона се изключва се се чака да излезе парата.
  11. Отваря се тенджерата под налягане и се слага сол и домати 1.5 – 2 cups (350 – 470 мл).
  12. Вари се още 15-20 минути.
  13. Слага се джоджен и се изключва котлона.

Authentic Louisiana Red Beans and Rice Gumbo

Products for the gumbo

  • 1 pound dry kidney beans
  • 1/4 cup olive oil or sunflower
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons minced garlic
  • 2 stalks celery, chopped (optional)
  • 8 cups water
  • 2 bay leaves
  • 1 teaspoon Cajun seasoning
  • 1 pound andouille sausage, sliced
  • 1 tablespoon salt

Products for the rice

  • 2 cups long grain white rice
  • 4 cups water

Preparation of the gumbo

Leave the red beans overnight submerged in a pan filled with water and a tablespoon of salt.

On the next day remove the water and pour a new fresh water in the pan. Heat until it reaches the boiling point.Remove from the stove and discard of the water. Move the bean to a cooker pressure.

Add 8 cups of water. Add one chopped onion . Add the cooking oil (sunflower or olive oil). Place the lid and make sure it is sealed. Boil for another hour after reaching the boiling point (you will hear hissing from the air trying to escape from the pressure cooker).

Turn off the cooking stove and wait for the steam to completely escape from the pressure cooker. You can speed the process by opening the valve on the lid. Once the steam is all gone open the lid and add the sausage, sliced in circles not thicker than 3-4 mm. Add the chopped green bell pepper. If you have celery, chopped it and add it too. Add the bay leaves.

Close the lid (but do not seal it) and boil for another 20 minutes.

Open the lid and add the mined garlic and the Cajun seasoning. Boil for another 5 minutes and then turn of the stove.

Preparation of the rice

Wash the rice with cold water and put it in a pod and add 4 cups of water. Put the lid on and boil for 20 minutes after reaching the boiling point. Boil using a low heat.

Turn the cooking stove off, open the lid and add 2 tablespoons of butter. Stir it until the butter melts completely.

Bulgarian Pancakes

How to make pancakes – the Bulgarian way

Ingredients

  • 3 eggs
  • 1 cup milk (1 cup = 240 ml)
  • 1 cup water
  • 3 x 1/2 cup white flour
  • 2 tablespoon sunflower oil or olive oil
  • 1 teaspoon salt

Preparation

Mix the eggs, the milk, the water, the oil and the salt in large enough pot.
Start adding the flour gradually stirring the mix at the same time until it becomes homogeneous.
When ready pour the mix into a jug with a handle – it will be easier to pour it on the pan later. Get an empty plate to put the ready pancakes into.
Put a non-sticking pan on the hot-plate (electric ring). Turn the dial to 5 (middle of a 10 position dial). Wait about 4 or 5 minutes for the pan to heat up.



Pour some of the mix onto the pan – put enough to cover the bottom but not too much because you do not want the pancake to become too think. Wait few minutes until the pancake starts to come off the pan. Then flip it and wait another few minutes. Watch this short video to see how to do it:

And these are the ready pancakes. You will get about 10 pancakes if you use the ingredients mentioned above.
Use some chocolate spread or strawberry jam or whatever you like – spread it on the pancake and then roll it. You can add some whipped cream if you want.
